Alaska Pollock Migas

Alaska Pollock or APO, is a white fish species belonging to the Gadidae family. APO is harvested from the ocean and feeds on a natural diet, resulting in low fat, carbohydrate, and cholesterol levels, and being a high-quality source of protein and essential minerals.

To produce APO migas, the fillets undergo a salting process. After salting, the fillets are dried in a temperature-controlled tunnel between 22–25°C. Once dried, the salted fillets are transferred to a handling room, where they are manually shredded, resulting in the final crumb product.

With a mild flavor and refined texture, pollock crumbs are rich in vitamins A and D and are well suited for salads, baked dishes, stews, and fried ball fillings.
